Campbell's® Easy Chicken and Cheese Enchiladas

Campbell's® Easy Chicken and Cheese Enchiladas

Ingredients
1 (10.75 ounce) can Campbell's® Condensed Cream of Chicken Soup (Regular, 98% Fat Free or Healthy Request®)
1/2 cup sour cream
1 cup Pace® Picante Sauce
2 teaspoons chili powder
2 cups chopped cooked chicken
1/2 cup shredded Monterey Jack cheese
6 flour tortillas (6"), warmed
1 small tomato, chopped
1 green onion, sliced

Directions
1.Stir the soup, sour cream, picante sauce and chili powder in a medium bowl.
2.Stir 1 cup picante sauce mixture, chicken and cheese in a large bowl.
3.Divide the chicken mixture among the tortillas. Roll up the tortillas and place them seam side up in 11 x 8" shallow baking dish. Pour the remaining picante sauce mixture over the filled tortillas. Cover the baking dish.
4.Bake at 350 degrees F. for 40 min. or until the enchiladas are hot and bubbling. Top with the tomato and onion.

I varied this a little. I didn't have a tomato or onion, but I added frozen corn and black beans to the filling.

Pork Chop and Potato Casserole

Here is one of my mom's recipes that we had for dinner tonight.

Ingredients:
4 pork chops
1 can mushroom soup
1/2 c. sour cream
1/4 c. water
1/2 c. milk
2 Tbsp. minced onion
4 c. potatoes (peeled and sliced)
salt and pepper

Directions:
Brown pork chops. Stir together remaining ingredients and place in a baking dish. Top with pork chops and bake at 375 for 90 minutes.

Taco Tuesdays

I've heard of several people doing a Taco Tuesday dinner theme and I really like that idea. I've even started to get a good collection of different Taco recipes. Tonight we just went with the basics.


Prep Time: 5 minutes
Cook Time: 10 minutes
Makes 12 tacos.


You Will Need
1 pkg. McCormick® Taco Seasoning Mix
1 lb. lean ground beef or turkey
3/4 cup water
12 taco shells or flour tortillas (6-inch)
Assorted Toppings: Shredded Lettuce, Chopped Tomatoes, Shredded Cheese, Salsa or Sour Cream


BROWN meat in large skillet on medium-high heat. Drain fat.

STIR in Seasoning Mix and water.
BRING to boil. Reduce heat and simmer 5 minutes, stirring occasionally. Spoon into warm taco shells. Serve with toppings, if desired.

Back in the game

So I'm finally getting back into the couponing game. I was out and about this morning and decided to stop at RiteAid . A few more new recipies

The next recipe I tried this week is one I've already posted about on here; Asian beef and noodles. This was the fist time I've made it. It wasn't an instant family favorite like some of the others we've tried, but we did enjoy it. It's defiantly a quick and easy recipe.

The next one I found on afewshortcuts.com; Crockpot pineapple chicken.

Crockpot Pineapple Chicken

• 3-4 Chicken Breasts (about 2 lbs)
• 1 can of pineapple in juice (tidbits, chucks, rings, it doesn't matter)
• 1 medium onion
• 2 TBSP soy sauce
• 1/2 cup chicken broth
Directions
1. Chop onion and place in crock pot.
2. Place Chicken Breast on top of onion.
3. Dump the can of pineapple (juice and all) over the chicken.
4. Dump the soy sauce and the chicken broth on top of everything.
5. Cover and cook on HIGH in the crockpot for 4-5 hours or on low for 6-8
hours.
6. Serve over rice and with a steamed veggie.
HINT
Make your own rice bowls.
Cut up chicken after it is cooked. Mix with steamed stir fry veggies. Place both
over rice and top with sauce from crock pot! DELICIOUS!

One again, not an instant family favorite, but enjoyed. An additional tip I would add is to not use thick chicken breasts. The chicken seemed very dry to me and I think with smaller chicken breasts the juice would have made it more moist and tender.

Lime Chicken Tacos

This week I'm trying a few new recipes that I've wanted to try for a while. Tonight was the first. It comes from Taste of Home and was not only easy, but delicious.

Lime Chicken Tacos Recipe

1-1/2 lbs. boneless skinless chicken breasts
3 Tbsp. lime juice
1 Tbsp. chili powder
1 c. frozen corn
1 c. chunky salsa
12 flour tortillas (6in), warmed
Sour cream, shredded cheddar cheese and shredded lettuce, optional

Place the chicken in a 3-qt slow cooker. Combine lime juice and chili powder; pour over chicken. Cover and cook on low for 5-6 hours or until chicken is tender. Remove chicken; cool slightly. Shred meat with two forks and return to the slow cooker; heat through. Stir in corn and salsa. Cover and cook on low for 30 minutes or until heath through. Serve in tortillas with sour cream, cheese and lettuce if desired.

Yield: 12 tacos.
